Protein Power Granola

320 Calories

Ever have those days where you’re itching for something sweet AND crunchy? Well I have you covered. It’s like a dessert but for breakfast. Or a snack. Or, you know, whenever.
But a lil heads up: this bad boy’s got its fair share of fats. So while it’s oh-so-divine, maybe don’t gobble down the entire jar in one go. (Speaking from, um, experience.)

Ingredients:

  • 1/2 cup rolled oats (shoutout to @bobsredmill for the best ones)
  • 1 scoop vanilla protein powder (getting my WHEY in with @coachchrissmits’ recommendation)
  • Nutty goodness: 1/3 cup each of walnuts, almonds, pumpkin seeds, pecans, and that tropical vibe - unsweetened shredded coconut 🥥
  • Add that cinnamon sparkle! (However much feels right)

Wet Ingredients:

  • 1/2 cup your fave peanut or almond butter
  • 1/2 cup coconut oil
  • 5 Tbsp of maple syrup

Directions:

  1. Warm up that oven to 350°.
  2. Throw all the dry stuff in a bowl. As for the nuts? Chop ‘em or keep ‘em whole - whatever floats your boat!
  3. Stir up the wet ingredients. Too thick? Add a splash of hot water.
  4. Dive in and get those hands messy, combining the wet and dry.
  5. Spread it out on a baking sheet. Let it tan in the oven till it’s all golden (around 18-20 mins).
  6. Let it cool down for 5-10 mins, then stash it in a jar. Mine? Disappears in about a week.
  7. Give it a try, tag a friend, and let’s get munching!
