This recipe will be on repeat in my house & hopefully in yours. It’s packed with protein, gluten-free & no refined sugar. Which means you can eat it guilt free.



Ingredients:

  • 3 eggs (room temperature)
  • 2 cups almond flour ( sifting is optional )
  • 1 scoop vanilla protein (Pure Paleo DFH @coachchrissmits )
  • 1/4 maple syrup
  • 1/4 cup avocado oil or olive oil
  • 1 tbsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup blueberries or wild blueberries frozen or fresh
  • 1 large orange zest

 

Directions:

  1. Set oven at 350°.
  2. Mix in all your wet ingredients.
  3. Addin your dry ingredients.
  4. Fold in the blueberries at the orange zest.
  5. Scoop in a generous amount in each cupcake mold and cook in the oven for 20min. Do the toothpick test to make sure they are cooked through.

 
Top It Off With:

  • Coconut sugar (optional)
