Summer Noodle Salad
Whip up this zingy Summer Noodle Salad and let’s turn the heat into a treat! Packed with crunch, punch, and a whole lotta munch.
Ingredients:
- 2 small carrots, thinly sliced
- 1 cup white cabbage, finely chopped
- 1/3 cup organic frozen edamame
- 1 medium red pepper, diced
- 10 cashews
- 1 small jalapeño (de-seed for less kick!)
- 1/2 bag of Ripe Nutrition noodles @ripe_lifestyle
- 1/2 raw zucchini, sliced like the carrot
- 1 tbsp sesame oil
- Dash of cayenne pepper
- 1 tsp sesame seeds
Dressing:
- 2.5 tbsp coconut aminos
- 1.5 tbsp rice vinegar
- 1 tbsp fresh chopped ginger
- Salt and pepper to taste
Directions:
- Cook noodles as directed.
- Sauté edamame, cashews, and optional snap peas in sesame oil with a hint of cayenne.
- Blend the dressing ingredients.
- Mix everything, top with fresh chopped ginger and sesame seeds.
